Onion Soup With 4 French Cheeses

A typical dish of French cuisine of peasant origin and therefore very poor. Over the years the recipe has undergone several small changes, to the point of becoming a highly sought after dish.


Onions (mixed: golden, white and red), 1 kg Butter, 50 g Sugar, ½ tsp Salt, up to 1 tsp Sage to taste, Vegetable broth to taste, White wine 1 glass

For Granting:

Baguette Langres, 20 g Brie (or Resit Brebis), 20 g Boursault, 20 g Camembert, 20 g Extra virgin olive oil to taste, Black pepper to taste


To prepare the 4 cheese onion soup, start by cleaning the onions. Start with the latter, peel them and then slice them thinly. Collect in a container and continue with the other two varieties. Climb a saucepan and let the butter melt, scented with the sage.

Then add the onions and stir, cover with the lid and let them simmer for about half an hour over low heat. At this point you will have to braise the onions, then raise the temperature and add the salt and sugar.

As soon as they have taken on a little color, blend them with white wine. Wet them until the onions are covered with vegetable broth. Continue cooking for another half hour.

Meanwhile, slice the baguette into slices about 1 cm thick, arrange them on a dripping pan and toast them in a hot oven at 200 ° for about 5 minutes.

Finally, move on to the cheeses: slice the langres, the boursault and the resit brebis and the camembert.

At this point the onions should be ready, transfer them to a large baking dish and distribute the slices of bread then start garnishing them with French cheeses mixing them together and creating tasty couplings from time to time.

Garnish with a drizzle of oil, a pinch of pepper and sage leaves and grill in the oven for 7-8 minutes until the cheese melts and the surface is a little brown. Your onion soup with 4 French cheeses is ready: bon appetit!
